I have maybe 100-200 categories, and I've found that if I put more than 100 books in any one category, it causes problems on my older devices. My newer devices seem to take 150+ without an issue. So this threshold is not fixed and may even depend on number of categories.
The UI performance is only moderately impacted by this, but sync is absolutely killed by having too many books in a category. Not sure why side loaded books and categories would mess with sync, but it does.

I don't think that the number of books in a collection is the cause. I have a collection with nearly 1,500 books in it, and another with nearly 400. My Mini - which must, surely, count as an older device - has no trouble coping with that. I haven't noticed any slowing. The attached photo is of that Mini.
Now, it might be that the number of collections is relevant; I use, as you can see, only eight, so I'm in no position to comment on that.
