Shouldn't epubs have a container.xml file anyway and the com.apple.ibooks.display-options.xml be an adjunct (epub2)?
Your test file wont open for me in calibre viewer, nor books, nor readdle documents.
Havent run epubcheck - but that might throw some light on your problem?
I expect more epub-savvy people than I will be along shortly to offer help.
