Not sure if this needs to be a PI.
For Windows:
select book: Tap 'O': rightclick the format: Scan with Defender (I will assume alternate A/V will have registered and be on the context menu).
You could also create an entry in the Open With plugin to open a specific format with your A/V of choice.
