Trying to establish a workflow

I got my K2 on Saturday and it's time to kill some books.

I know there are a great many guides to converting a book but I can't figure out which is best. Here’s what I have to work with:

Macintosh:
ScanSnap 510M (dual side, autofeed page scanner)
Acrobat 8.0 Pro
FineReader for ScanSnap
DevonThink Pro (uses ExactScan Capture)
Stanza and Calibre
Office 2008

PC emulator (VMWare Fusion):
Office 2007

So here's my thing. I can scan a doc into pdf using the scanner, take my pick of OCR (Acrobat, FineReader, ExactScan) then take that and output it as HTML (from Acrobat), open that in Word on the PC emulator and use something like BookReader to finish the setup.

Does that make sense or is there a better way? I have Fusion set up so I can grab and save files to my Mac hard drive so moving the files isn't a problem.
