Buy an "unlocked" device and you get the same control whether you use physical SIM cards or eSIM "cards". My iPhone is unlocked (bought this way direct from Apple), always had my choice of carriers within the limits of carrier options in the US. Two eSIM slots is convenient for international travel.
The only costs to me are that I didn't get a carrier "discount" and I was never saddled with a long-term service contract.
