I think what makes fanfics entertaining is that they go in a different direction than the original story. If it's just a rehash of the original story, why not just read the original story?
Often fanfics provide something that the original author didn't do but the fans wanted to see. As an example, many fans of the manga/anime
Ranma 1/2 wanted to see a pairing of Ryoga Hibiki and Ukyo Kuonji but the author just created a custom-made girlfriend for Ryoga. So many fanfic writers have written stories pairing Ryoga and Ukyo.
