A jailbreak isn't going to be a magic fix to take Amazon out of your Kindle. It is not a ROM, it is not a whole OS, it doesn't replace the regular Kindle functionality. All it does is let you run 3rd party code on the Kindle. Your firmware is years and years EOL so there isn't likely to be a future one to break its current jailbroken state, so even blocking OTA isn't going to gain you much of anything.
You can run KOReader and read EPUB directly on the Kindle, and Amazon won't see any of the that or do anything to those files.
