Basically if you install 5.17.1 or later on an already jailbroken Kindle, you will lose the jailbreak. Since only WinterBreak works on those firmwares, if you want to jailbreak again, you will have to use WinterBreak, which requires registering your Kindle.

Technically Amazon would be able to see whatever books you sideload, however historically they have shown very little interest in that. Not to say it won't change but I've never heard of anyone running into issues for what they sideload.

I think you can unregister your Kindle once the jailbreak is applied but I'm not 100% sure; perhaps the hotfix will disappear from your library and you will have to put it again manually in the "Documents" folder and run it. Sorry, I'm just not sure enough to confirm this.
