I realised that I need to be in ADB shell.

Now the error I get is:
dd: /dev/block/by-name/boot: Permission denied

I'm attempting this using Linux Mint.

Edit: some searching got me to try "adb root" but that gives me the error "adbd cannot run as root in production builds"
