I guessing some won't work because it's eink, some because of version of Android, some due to changes needed to make Android work on eink.
My experience is with Android 8 on the Boyue Likebook Mars (phoenixed as Meebook) where one app even stopped working because the Chrome stuff was wrong version, though that app still worked on Android 8 phone and Playstore did allow updates in general.
I got my Mars for the Local Library loans and it did work. The Google Playstore Books still working when Borrowbox stopped working. Lichess and K9 mail and Musicolet worked just about, but there was always the issue of some GUI element being invisible. No version of Solitaire worked. The Google Gboard was unusable for handwriting (but works on some ancient phones even an earlier Android just with a finger).

No argument. If you want an eink "Tablet" then Boox does seem best show in town, but isn't cheap and I'm sceptical it's as good as OLED or LCD Android with a matte screen.
