1. Disable all the plugins except for: gestures and cover browser.
2. Do all the tweakings you want (including mergen3107's suggestions)
3. Enable and configure the rest of plugins your dad is likely to use.
Second step can be pretty wild. Defaults include multifinger gestures, one finger multiswipe gestures and defeault platform event map.
I went and disabled most of the "unexpected" actions when using KOReader as a tool in special education. In the context of a "regular" dad it should be enough to tell him to use a single finger as the interface and disable most of multiswipe gestures he won't use.
Also, like mergen3107 pointed out, activation zones are important to tweak. That covers both the top menu activation and screen corners.
If your dad highlights things you can setup screen corners to pass through, otherwise set them to none.
