And, yes roasted veggies have pretty much saved me from the veggie phobia forged in the mushy wasteland of my youth.
Once upon a time, long long ago, there was this wonderful diner, at the traffic circle at....gosh....Rte 31 and hell (523?)....I can't think of the other road/street, in Flemington, NJ, the imaginatively-named "Circle Diner." OMG, the open-faced sammiches, especially the turkey with fries and gravy...TDF. MOST DEFINITELY Gold Standard Diner Cuisine!

I've been trying to duplicate that damned plate for (mumble) decades, LOL.

Of course, I also long like a dog for the olden 1970's Texas Weiner (The name of the stores, for those never blessed with a TW Chili Cheese Dog), Chili-Cheese dog. OMG....I will not say how many imitation recipes I've tried to make the "chili/sauce/gravy" to emulate those. Those stores are a thing of the past. GOD YOU GUYS ARE MAKING ME STARVING!
