Sorry to revive an old post, but I thought it might be useful to someone else who may have had the same issue.
After my last post I pretty much gave up on the plugin and just manually copied and pasted the metadata I needed. But the changelog for the latest Calibre update (7.20 from 18 Oct. 2024) mentioned that from this version Calibre will be using its "bundled SSL certificates instead of the system certificate store by default".
This got me thinking it might be related with the problem I'd been having, so I tested fetching metadata with the plugin for few books, and it worked perfectly!

So, I guess for now the issue is solved ��
