It's not necessary for most manga, which have smaller physical page size.

I have not read paper comics in many years, but I find reading them on my iPad Pro absolutely beautiful and vibrant, in a way I never found paper comics to be. I'm always pausing to admire and soak in the beauty.

eInk color does not offer that 'wow' experience and probably never will but it adds versatility and it's just nice to see color cover thumbnails and images instead of greyscale ones and being able to have highlights in color.
