First question is what you mean by random tags?

Second question is if you are saving to disk before copying to OneDrive or are you simply copying your calibre library into OneDrive.

Next question is if you are referring to the .opf file in the epub when you state opf file or the metadata.opf file in the calibre library. If you are referring to the metadata.opf, you need to realize that file is a calibre file and does not have all that much to do with the .opf file in the ePub. When you open the ePub file in calibre's ebook-editor and look at the ePub's .opf file, what information do you see in there?

I think that it is very likely that you have information in your ePub's .opf file that Moon+ Reader is reading since by default, calibre does not modify the ePub file in the library.

OTOH, my experience with Moon+ free version is that it is a poor ePub reader which by default disregards the CSS in an ePub.
