What do you want to accomplish with this?
Is this the device email address you want to change? That email goes to Amazon servers and they route the file you attach via their WhisperNet and sync down to your device. Your device has no concept of that address except to show it to you as informational.
If you mean the email address of your Amazon account, you change that on Amazon.
