In short: copy the template to a specific folder and update the xhtml.
You can remove fields but not add more than that one from the dialog mentioned above.
Many thanks! I did as you suggested and everything went fine. Still I believe it's worth noting that having to create a customized field for an existing variable (languages) it's a bit redundant. Anyone knows why "languages" is not among the available fields in the original template? I also tried to introduce {languages} in the template file but just after the action of producing the epub started, it stopped with an error caused by that variable. Any help?
