So now how do I install DE-EN, ES-EN, FR-EN etc dictionaries from https://www.wikdict.com/page/download into this folder. As zip files they are not recognized, and unzipped they all have a similar structure as to file-names. So they have to be unpacked into their own folders. But KOreader does not recognize these folders.

You unzip dictionaries on whatever folder you want inside the dict folder. They will get picked the next time you open KOReader

Just make sure you're downloading proper, supported, dictionaries (in stardict format), like the ones in https://github.com/BoboTiG/ebook-reader-dict
