You can do that in three taps, at least. Tap in the middle of the screen to open the menu, tap the >| button on the progress bar to jump to the next chapter, then tap the middle of the screen again to close the menu. I often do this to see how many pages I have left in a chapter, since I don't like having headers and footers taking up screen real estate all the time. (Of course, I use "back to page x" instead of actually jumping to the next chapter.
