I follow those steps for myself on a random test book and it works as intended.

The only circumstance I can think of this would happen is if you're changing the OEBPS/log_page.xhtml file. Everything else should be replaced. Or maybe a full disk, but I'd expect to see errors from that.

So if I'm going to help, I'll need the exact details to try and isolate what's happening:

What story URL are you using?
What output format?
Are you sure you're editing the same format file?
Do you have FFF's 'Automatically Convert updates' feature on? Converting to what format? (It uses your Calibre Preferred output format setting.)
What text in what file inside the ebook did you remove?
Where did you change the author's name? It can be in an ebook more than one place.
What are you using to check for the changes? Calibre's Viewer or something else?
Are you sure you're looking at the same format FFF is writing?
Are you sure you reopened the output format after overwriting?
