I'm glad you asked that, grasshopper. If you use kepub, you can add one supplementary font without needing to embed it which so far has been my preferred approach. If you use epub, there is no supplementary font so a sideloaded font would have to support the entire set of glyphs you want to use. This leads to having to embed one or more fonts in the epub and making sure you keep track of which is being used where.
One major issue, for me, is that is most of the math font lacks quite a few glyphs so you can't really use it by itself by selecting a font from the font dropdown or they are simply a fugly font.
