Greetings everybody, after almost 3 panic attacks because of how frustrating is it to have the whole kindle in Chinese, stuck in demo mode, without any way to change language, factory reset, or re-sell because of the "DONT_CHECK_BATTERY" was not present.
Today is a good day, I managed to jailbreak my Kindle Paperwhite Signature Edition 11th Gen on version 14.3.0.1, which I think is the best version right now.
Correct me if wrong.
So I'm going to re-post the tutorial in which I used a different approach that's available on the first page along with some pictures, maybe it will be useful for somebody.
Kindle Paperwhite Signature Edition (11th Generation)
5.14.3.0.1 (3838590001)
Backup everything, always, never know, just copy the content of your kindle and put it in a desktop folder so you can preserve your books and some settings.
0. AIRPLANE MODE ON, AT ALL COSTS!
1. Type ;enter_demo in the Kindle search bar (KINDLE IN CUSTOMER MODE)
2. Reboot the device
3. Once in demo mode, skip setting up wifi and enter random values for store registration
*(1 letter store name; 3 numbers for store number and postalcode)
4. Skip searching for a demo payload and Select the only whole-screen "standard" demo type available
6. Press "Done" at the prompt to sideload content, just to skip this.
7. Once the demo is setup, do the "secret gesture" (double finger tap on bottom right of screen then swipe left, it will require multiple attempts, lookup for a video on youtube if you find this impossible and frustrating.)
8. Enter the demo configuration menu by typing ;demo into the search bar
9. Select the "Sideload Content" option, plug your usb into your Kindle & Computer
Now it is time to prepare your reflexes and speed abilites to it's finest. Memorize those steps and do it the quickier you can.
10. Copy the contents of the LanguageBreak folder to the Kindle, merging and replacing all files (There may be no files to replace, this is just for you to know.)
11. Unplug the USB cable of your kindle and go back to the demo menu
12. Start copying the LanguageBreak folder content EXCEPT ".demo" folder
13. Select the "Resell Device" option with the cable slightly unplugged from Kindle/PC, so that you can quickly re-insert it, beware that it doesn't make any contact with the USB hub! I personally kept it attached to my pc, and slightly prepared at the entrance of my Kindle USB port.
14. And press Yes/Resell
Hopefully you prepared yourself, NOW IT'S THE TIME! GOTTA GO FAST!
15. In between 3-5 seconds Kindle will show you the "PRESS POWER BUTTON TO START"
16. As soon as it appears plug your kindle and paste everything except ".demo" folder as instructed at step
12., overwrite files then safely eject but
DO NOT UNPLUG THE USB CABLE!
16. Hold the power button as instructed on screen again
17. You should be in a language selection menu in a few seconds
18. Choose Chinese (简体中文) (The one above the odd Pseudot language)
18. I personally picked up English language because thought that the Jailbreak failed and had to start again from step 1, because PSEUDOT... was missing.
19. Your kindle should reboot and you should see some log message on the screen, that's what surprisingly happened!
I've seen some rows text in the top left, jailbroken.
After I've turned it on, I installed the hotfix as instructed by @mergen3107, update from kindle, restart twice, first restart brought up * LOG * and the second restart brought up only the kid and the tree, it went through flawlessly, I guess I am really jailbroken on my Kindle.. am I?

What's next? Suggestions? I would like to Disable any kind of amazon bleah updates, would like to connect to the internet without any concern of Amazon knocking at my Kindle to install anything, disable screensaver, and make it bloat-free, thanks in advance for everyone who read this far.
