defaults.ini says:

So something like this maybe:

chapter_title_strip_pattern:^(Chapter *[0-9]+[\.:, -]*)?

Need to add IVX, etc if you want roman numbers, maybe replace with ^(Chapter *[^ ]+[\.:, -]*)? to get One, Two, etc.
