An eink will display last image if CPU unexpectedly sleeps. Even if panel is unplugged.
Very occasionally when I tap sleep button nothing seem to happen. But screen swipes or taps or button presses are ignored. Later the sleep screen might appear. It will briefly show the sleep screen when you tap to wake.
On LCD, Plasma, CRT, EL, LED, OLED you get a blank screen if cpu "forgets" to update, or screen/panel disconnected.
Eink is practically nano-steam-punk. See also the insanity of DLP, but though it's also nano-mechanical, it's probably not bistable.
