My jailbroken Oasis 3 is running 5.12.4 and I do not plan to update it. I would downgrade it to 5.11.x or 5.10.x or preferably to 5.9.6 except that the hardware does not support below 5.12.x
You can use a web browser on a computer download firmware from amazon for transfer to a kindle over USB, but they have made it difficult (but not impossible) to get anything but the latest version. I no longer know how to figure it out, but people have posted direct links for specific versions for specific kindle models. You would have to search around.
People have also posted sites with old versions. I don't have direct experience with those, Again, search around on mobileread.
Before you decide to go to a newer version, read the threads complaining about the new user interfaces over the past several years.
