Yes, you can use your Kindle without an Amazon account, but you won't be able to use collections unless you jailbreak. I have no idea whether you even can jailbreak with recent firmware versions, so that's something to keep in mind - you may not be able to jailbreak your PW.

You can sideload via USB, but don't use mobi, that's an old, outdated format. Use AZW3. Formatting is better, you can use custom fonts and the boldness slider.

And you can keep wifi permanently off if you want.
