There's two base horse coats: Chestnut (recessive, ee) and Black (dominant, Ee or EE). When you get the agouti modifier gene (Aa or AA) onto a black coat, it restricts the black to just the points (mane, tail, and legs) and you get a bay horse.
The word is thought to come from 'Baie,' which is an old french word for 'brown.'
