You can categorize and sort your books in Calibre in many different ways. Tags, custom columns (for example, genre column), virtual libraries, saved searches. What you can't do is transfer your Kindle collections to Calibre. The Kindle database is not accessible to Calibre.

Some other ereader brands integrate well with Calibre collections. Kobo and Pocketbook, to name two. But not Kindles.
