There was an illustrated edition of Mervyn Peake's _Gormenghast recently as an ebook --- Amazon Kindle link:

There was also Poul Anderson's _The Demon of Scattery_ with Mildred Downey Broxon, illustrated by Michael Whelan and Alicia Austin --- not sure if it's had an ebook release yet, but it's well worth tracking down.
