FWIW - I can cherry pick favourites from Manage Categories which can be a variable list, above some threshold (probably 5) it relegates custom columns to a separate flyout.

I found a way to declutter the Sort By menu, deselect all the columns:

Afterthought: perhaps the Sort by multiple columns dialogue could have a Show deselected columns checkbox.
