I suspect that you are seeing the date the book was copied to your Kobo, i.e. the file timestamp on the Kobo device.

You could use the Kobo Utilities plugin's Update metadata in Device Library to set the date to *File timestamp, Kobo Last Read or calibre's Date, Modified or Published. I've never bothered to play with this feature so not certain how much use it will be to you.
