Not sure about underrated, but Pierce Brown's Red Rising Saga has not been mentioned. I bailed after the first trilogy, but that's on me. 3-4 books is my limit these days when it comes to series.
Also Vonnegut's Cat's Cradle. And to some extent, his Galapagos as well.
