A test might be (on a rooted device at least) is open an epub, create an annotation, close the epub (saving the notes) and then run the find command searching for any files changed in the xx hour(s). If the find command is unable to perform a granular enough time search, then leave the device alone for 48-hours before running the epub annotation test.
