There is no real true easy automagic way to do it. You would have to physically edit the PDF or convert it to another format to take out all the images. If it's a text-based PDF, you can just convert it to a document file then remove all the images from there. If it's an image-based PDF, you would have to run OCR, then convert the OCR'd PDF to a document. So there are a few different ways, but they're all time consuming and not super simple.
