The near-equivalent, for an eBook, would to be giving the reader a preliminary table of contents where you could click into the original or modernized version, your choice (unless locked by a parental control). If a compromise here is needed, that would be a good one.

But the damage has been done. B&W is an art form. Filters were used to create contrast and light effects that would render the 'feel' best in B&W. Just turning off color, does not put that back.
