So my DRM plugin does have the serial numbers configured for both the eink machine and the V1 Fire but that doesn't work for either "add file" (i.e. automatic) or "load from device").

I believe that the problem is that my Paperwhite is too new. The firmware is 5.14.3.0.1 and the documentation says that it has to be 5.10.2 or older. The Fire also has a S/N but that behaves the same way for me.

So to try and be precise: option 3 only works on recently published books if you have a very old e-ink Kindle (and you can imagine they eventually will shut that off too).
