I have an Onyx Boox Note 3, and on that device I didn't manage to have Google Translate in FBReader translate to another language than the device's system language. But alas my language (Norwegian) isn't among the system languages of Onyx Boox. On my Onyx Boox Note 3 I just chose Danish as system language, which is almost like Norwegian, so that used to do the trick.
But now that I've bought an Onyx Boox Poke 4 Lite, I see they have removed Danish as a system language. The solution I found was a button inside FBreader to change which language it were to translate to. It might be this button has been there all along, but I think it's an app update which has made it appear. Nonetheless it works now!
