Just do an EPUB to EPUB conversion in calibre and it will take care of it. Or use the MOdify EPUB plugin to add the UTF-8 encoding definition to the EPUB files (amazons epub processing code incorrectly uses ISO-8859-1 as the fallback encoding when no encoding is specified).
