If I'm understanding you right: Click it four times, and you'll get this icon:

Here, everything in Fanfiction.Mass Effect, Fanfiction.Elder Scrolls, and Fanfiction.Other is excluded from the book list.

EDIT: Additionally, the search will look like not tags:"=.Fanfiction". Note the period following the equal sign.
