Correct. You don't--at least not like that.
series isn't a custom column and therefore doesn't work with
custom_columns_settings.
You could experiment with
include_in_series:series,collections and 'fixing' it after the fact, but I do not recommend it.

No, collection URLs are not collected--a story being in multiple collections is even more of a thing than multiple series. After all the nonsense that went into making multiple series for AO3, I'm not terribly interested in opening that can of worms.
