I just checked my two PW3 Kindles. Of course both flat because Amazon does little more than put a sleep screen or blank it, so a delay till they charged enough to boot.
No method to set date other than enable WiFi. The time reset to 12 pm, and can be adjusted. Date stamps on reading will be wrong ongoing. the older search command and menu levels that show date are missing. If you annotated, no doubt "my clippings" will be wrong.
Almost certainly the lack of being able to set date is an erroneous or over-zealous desire to protect library/shared/KU loans.
KU is anti-competitive with regular libraries as Amazon doesn't buy copies it loans and also may reduce income to authors as it's not just based on page reads but on a "pot" decided by Amazon. In UK and Ireland the libraries have to buy whatever number of virtual copies of ebooks for simultaneous loan and unlike USA also pay a small royalty per paper or ebook copy borrowed (irrespective of pages read).
Amazon's "innovative" pay author / publisher on basis of pages read is an invasion of user Privacy, may not always work accurately and breaks the reasonable model of how creative content is sold which has existed ever since libraries existed or content selling has existed. The Internet Archive Library is worse and Google's scanning of copyright works is USA state enabled theft. It's not just aiding search.
