With this second eBook, the font used is not good. It's way too thin. Also, the Appendix is unreadable as some of the text overlaps and some text is way too small. I am using Adobe Digital Editions 2.0.1 to view your eBooks.

Are you actually checking how these eBooks look once made into ePub?

I've taken a quick look at the second eBook and what's with all the Amazon media queries when it's an ePub eBook?

I suggest you grab a copy of Sigil or Calibre and dive into the code and fix it. And don't use Pressbooks to convert/create. It doesn't seem work well enough.
