Why 'dubious', I started using the built in Open With feature the day it was released - the next day I removed the Open With optional plugin I'd used previously.

If you don't want calibre to use its viewer for a particular format uncheck its entry in the Preferences->Behaviour->Use internal viewer for: list and it will invoke the default handler you have set in your OS. Then if you wanted to have the option of using calibre's ebook-viewer you could add it to the calibre Open With list - and give it a keyboard shortcut.
