I enjoy the variety, under the 2 crucial conditions mentioned above: as long as the original writer's meaning is preserved; and the resulting book is a joy to look at. There can be many varieties of joy!
My preferences as to how I want the text to look (font size, font type, margins, line-spacing, text-indent) are pretty narrow. I want the text to look just right for me and as it usually takes time to get it look that way via overrides (plus I hate fiddling with them all the time), I edit the css.

And yeah, I didn't like the way many, many paper books looked. Font was too small/too big/too pale or just ugly, line-height was too small/too large and so on. With ebooks I can have them all look exactly as I want. That is far more important to me than variety. I'm pretty anal that way.
