As for me, because I edit the css until it looks exactly the way I want. And after I've done editing I want the app to respect that.
As to why I edit instead of using app/device overrides: because I read on different devices and have read on many different devices/in different apps over the years. I have no wish whatsoever to fiddle with the settings every time I open a new book or switch devices. I want all my books to look more or less the same on
any device I use.
