I will assume, you are looking at the code or internal viewer

Updating data in the MDE does not affect the Library copy. Never has.
You must force it to happen. Embed Metadata , Polish or Modify EPUB (a plugin) can do that (if configured to)
Sending to device updates the device COPY only
