{date} is when the RECORD (metadata) was first created.
It happens when you Add a book , but you can create a entry with no formats (Empty Book).
If the actual Format add date is important, then you need to have a custom column and log it manually as {last-modified} updates with any change that affects the record.
You can hover over the format in the MDE and see the File Systems last Modified timestamp
