Most technologies have to make a compromise between contrast, gray scale, and resolution. There's also a problem with data transfer time at high resolutions. If I need a sunlight-readable, backlight-capable text display I'm willing to sacrifice resolution, so long as I can use gray-scaling to anti-alias. For that trick (principally on LCDs) you can't have long refresh cycles, hence lower resolution to limit data transfer rate.
E-ink gets around that problem, but you can't backlight. You also can't show moving pictures, but that's a different topic.
My favorite ebook reader of all time was the Compaq Aero 1550 Pocket PC. Great display. Alas, everyone wanted color, so that technology died out.
