No, Windows is not choosing it based on your hair colour, nails or anything else. But, you might be choosing to do so.

Please actually read what has been said. The font existed a long time ago. MS removed it and put a logical font in. The selected font could be changed. How, I don't know, but, somewhere it probably was user selectable. And I am sure that the exact font MS chose to substitute has changed at least once with the different versions of Windows.

A new version of calibre was released. Not just a minor version bump, but, a major version change. You should expect things to change when that happens. Some of those things you will like, some you will not.

In this particular case, the version of one of the libraries that calibre uses was changed. This is Qt. This meant a lot of things happening. It means getting bug fixes, but, it also means getting changes that are not as desirable. In this case, something is happening you don't like. As has been stated, it will not be reverted as it would mean reverting most of the changes in calibre 6. And not going ahead with the update to Qt6 would mean not being able to support newer operating systems.

At this point, you will have to accept that it is changed. You choice is either to go back to calibre 5.44, or choose another font. As people have told you how to find what the actual font that was being used when you selected "MS Shell Dlg2" is, you can easily update to this. Or, experiment a bit and see if there is a font you prefer.
