Thunderbird uses Server Settings for each email account you set up. They have changed the GUI over the years.

At mailbox name there is an v to open or fold the menu

These settings exist on ANY desktop non-web mail client for each mail box.

Otherwise how would the program know where and how and how often to get email?

The GUI used to be far better, but mozilla has been slowly wrecking Firefox and Thunderbird.
